Eid ul-Fitr marks the end of Ramadan which is a month of fasting and prayers. The popular Islamic festival is celebrated globally, but the celebration date varies depending upon whether or not the moon has been seen. Besides the common prayer at masjid and interchanging of festival greetings and gifts, lavish meals also form a requisite part of the revelries.
Eid ul-Fitr 2019 will be celebrated on 5 June, 2019 in India. The festival is also known as ‘Meethi (sweet) Eid’ because of the delectable sweet dish ‘Seviyan’.
This sweet dish is focal point of the festive feast besides the savoury meat delicacies. Eid ul-Fitr feast is incomplete without this show-stopping seviyan milk pudding. The shahi kheer is a traditional recipe having creamy milky texture and lots of dry fruits and nuts. Although the classic recipe is great, but with little creative culinary mind, we can take some liberties with this timeless sweet-dish and produce some enchanting result in the process.

Preparation time: 30 minutes
Cooking time: 60 minutes
Full cream milk: 1 litre
Vermicelli: 1/3 cup
Sugar: 6-8 tbsp
Custard powder: 1 tbsp
Almonds: 2 tbsp
Unsalted pistachios: 2 tbsp (shelled)
Cashews: 2 tbsp
Raisins: 2 tbsp
Mix fruit cocktail: 1 small tin (preferably Delmonte tin)
Pure ghee: 1 tbsp
Soak raisins in water for 30 minutes. Drain and keep aside.Coarsely chop cashews, almonds and pistachios.Drain sugar syrup of fruit cocktail and chop them in small cubes. In a thick bottomed pan add ghee and turn on flame.
Add chopped almonds, cashews and pistachio and saute on low flame until slightly golden. Add vermicelli and keep stirring it on low flame until it becomes golden brown in colour.
Add milk and give a boil on high flame stirring occasionally, mixing all the ingredients. Simmer it on a medium-low flame stirring occasionally for 45 minutes or until the milk becomes a little dense. Add half cup of cold milk to custard powder and mix well. The solution should be lump-free.
Add this custard powder and milk solution in the simmering kheer and keep stirring for 10 minutes on low flame. There should be no lumps due to custard powder in the kheer.
Add sugar and mix well stirring for another 10 minutes on low flame.Turn off flame and let this pudding cool down. Add chopped fruit cocktail and mix well.Refrigerate this custard-fruity vermicelli pudding for four to five hours.
At the time of serving, chop a fresh banana and mango in small chunks. Top the pudding with a layer of these small fresh fruit pieces in a serving dish.
