Festivals in India are a wonderful statement on the country’s diversity and multi-ethnic charm. The biggest Indian festive season is around the corner. No matter what festival it is, there is generally some sweet preparation in every house to mark the religious celebrations and joyous happenings.

Ingredients

Wheat flour: 2 cups

Boora: 1.5 cups

Fresh yogurt: 3 tbsp

Fennel seeds: 1 tsp

Fresh cream: 2 tbsp

Milk: as required

Pure ghee for deep frying

Method

Mix boora (a kind of powdered sugar), wheat flour and fennel seeds together. Add yogurt, cream and mix well. Add enough milk slowly to make a moderately thick batter like pakodas. Mix well all ingredients for five to ten minutes. Cover the batter and give a rest for two hours.Heat pure ghee in a frying pan.Mix the batter again and with the help of a small tablespoon, put small portions of the pua batter in hot ghee for frying. Try to make puas in round shape while putting the batter in the ghee for frying. The size should be like a small puri having a diameter of two inches. Fry them golden brown flipping from both sides. Take them out on a kitchen towel. Serve them hot or at room temperature.

Tips to make soft and fluffy puas:

Always use boora instead of sugar or powdered sugar to make soft puas.

Add little fresh cream and yogurt to make them fluffy.

Fennel seeds give a unique taste while eating puas. Although it is optional.

Use milk instead of water for making the batter. It will also help to make the puas soft and fluffy.

Always fry puas in pure ghee for the classic taste. Refined oil spoils the authentic taste of puas.

Every festival needs a touch of sweetness. Nothing in this world can beat the taste and authenticity of fresh and pure homemade sweets. Of course, everyone has his own favourites but these wheat flour puas are something which nobody can say no to.
