Since time immemorial, til laddoos have played their significant role on the festival of Makar Sankranti. Til (sesame) is prized in Ayurveda as one of the most winter-perfect foods that helps to keep the body warm. It also increases the immunity at the same time. The oil present in sesame seeds helps generate body heat and keeps the internal body temperature from dipping. Til laddoos are full of yummy flavour of crunchy sesame seeds and mouth-melting khoya (evaporated milk solids). Here is an easy and a quick recipe to make these laddoos at home.

Ingredients:

Til (sesame seeds) 1 cup

Khoya 1 cup (grated and tightly packed)

Pure ghee 1/3 cup

Sugar 2/3 cup (powdered)

Almonds 15-20

Cashews 15-20

Raisins 20

Method:

Heat a thick bottomed pan, turn the flame low and roast sesame seeds without adding ghee. Keep stirring occasionally and roast till golden crunchy.

Roast them till you hear their crackling and popping sound. You can taste a few to check whether they are crunchy or not.

Turn off the flame, let sesame seeds cool down at room temperature.

Grind sesame seeds coarsely in a grinder.

Heat the same pan again and put khoya in it turning the flame low. Keep stirring till khoya becomes crumbly and lumpy. It will take 10 to 15 minutes.

Turn off the flame and let the khoya cools down till the time its heat becomes tolerable to touch with your hands, then add coarsely ground sesame seeds and powdered sugar in it. Add chopped almonds and chopped cashew nuts in it. Also add raisins and pure ghee.

Mix all ingredients well with your fingers and palm breaking the small lumps of powdered sugar and khoya.

Once the mixture becomes smooth and even, make small portions out of it.

Take these portions one by one in your palm and give them the shape of laddoo.

Store the laddoos in an airtight container.

In winters, you can store these laddoos outside refrigerator for a week and inside refrigerator for a month. It is a big hit recipe. Worth trying!
