Ingredients:

Spiral pasta2 cups
Green capsicum1 cup
Yellow bell pepper1 cup
Red bell pepper1 cup
Cherry tomatoes10
Olives10
Almonds12 (roasted)
Walnuts8
Vinaigrette dressing2 tbsp
Method:
Steam pasta cooked with a dash of olive oil. Drain off the water.
Cut green, yellow and red bell peppers into 1” cubes.
Cut cherry tomatoes into two halves.
Cut olives into rings.
Mix all the ingredients and chill.
Add the dressing just before serving and mix well.
Vinaigrette Dressing Ingredients:
Olive oil3 tbsp
Vinegar4 tbsp (white)
Freshly ground black pepper½ tbsp
SaltTo taste
Garlic2 pods (crushed)
Method:
Place all the ingredients in a deep bowl.
Blend well with a hand mixer.
Store in a closed airtight container.
