Weekend Delight: Golden Corn Pudding

This Golden Corn Pudding has a pleasing flavour. It is a great weekend side dish which you can enjoy with dinner. It is definitely a comfort food that you can bake to impress your family and friends.

Serves: 4, Preparation time: 15 minutes, Cooking time: 20 minutes

Ingredients for Golden Corn Pudding

Sweet corn kernels        375

Water                               25 ml

Eggs                                  3 large

Milk                                   250 ml

All-purpose flour             50 grams

Cheddar cheese               250 grams (shredded)

Spring onion                      50 grams (finely chopped)

Sweet red pepper             50 grams (finely chopped)

Pepper                                 ½ tsp

Salt                                       to taste

How to make Golden Corn Pudding

Take a big bowl that can be used in a microwave oven. Mix corn and water, microwave on high power for six to eight minutes giving a stir after every three minutes. Drain if any water is left.

In a separate bowl, beat eggs, stir in cooked corn kernels, cheese, milk, onions and sweet pepper.

Whisk in flour salt and pepper.

Pour the batter in a greased microwaveable moulds or one large baking dish.

Cover with waxed paper. Pierce tiny holes on top.

Heat the oven on convection mode. Bake for 10 minutes.

Insert a knife in the centre, if it comes out clean, your pudding is ready.

Let it stand for five minutes before serving.
