Sweet and starchy food cravings are probably the most frequent cravings people generally complain. Despite what we are taught to believe, our cravings for delicious cookies are not the enemy if we eat few bites occasionally. Yes, they are buttery, soft and just melt in your mouth, but nothing is wrong if people eat them in moderation.

If you want something little richer with a cup of tea in the evening, try making and eating these classic shortbread cookies. Also perfect, if coffee is your beverage of choice.

Shortbread cookies recipe 

Serves: 6 | Preparation time: 15 minutes | Baking time: 30 minutes

Ingredients:

Butter                          250 grams

Corn flour                    1/3 cup

Icing sugar                   1/3 cup

Plain flour (maida)     2 + 1/3 cup

Vanilla essence           ½ tsp

Method:

Melt butter over low heat in a pan. Allow to cool slightly at room temperature.

Sieve maida and corn flour in a bowl.

Add icing sugar and mix well.

Add butter and vanilla essence. Mix well.

Press this mixture in 18 cm by 28 cm by 7 inches rectangular tray.

Smoothen the top layer with a spatula. Cut in rectangular shape of your desired size.

Prick each rectangle with fork.

Bake on moderate temperature in oven for 30 minutes.

Insert a toothpick in the centre to check whether the cookies are baked or not. If toothpick comes out clean, it means that cookies are baked.

Let them cool. Store in an airtight container.
