A glass of chilled mango lassi would not only quench your thirst but also make you feel refreshed, energized and happy. Mango season is on and mango lassi is one of the most flavourful drink among all fruit lasis. At home we generally make regular lassi (sweet or salty). This version is something more delicious to satisfy your taste buds and thirst as well. By adding scoops of mango ice cream, it comes out even tastier.
Preparation time: 15 minutes
Mango: 1 (medium)
Milk: 1/3 cup
Fresh yogurt: 1 cup
Ice: 1 cup (crushed)
Rose water: 1 tsp
Unsalted pistachios: 1 tbsp (chopped)
Unsalted cashews: 1 tbsp (chopped)
Cake fruit: 1 tbsp (muti-colured)
Sugar: 3 tbsp
Mango ice cream: 2 scoops
Peel mango and chop it. Blend it to a smooth puree along with milk and sugar in a high-speed blender. Add chilled yogurt and blend for a minute. Add crushed ice and blend for two minutes. Add rose water and give a single blend. Take two tall glasses. Put a scoop of ready-made mango ice cream in each of the glasses. Pour the mango lassi and fill the glasses leaving ½ inch of space from the top. Add chopped unsalted cashews and pistachios. Give a quick stir.
Garnish with cake fruit preferably multi-coloured. Serve chilled inserting a straw and a spoon in each glass. As those who like to experiment, there are endless ingredients to add and make it more creative and delicious. You can add few seeds, cardamom powder or any other flavour booster of your choice to enhance its taste.
Ridiculously simple, go on and drink up!
