5 ounces beer
1.2 ounce lime juice
Drop of vanilla extract

Mix all the ingredients in a short beer glass filled ice and stir.

Champagne with a Blink

Makes: 8 servings
Preparation: 10 mins
Cook: 10 mins
Chill: 4 hrs

1/4 cup sugar
1/4 cup light-color corn syrup
1/4 cup water
3 tablespoons finely snipped crystallized ginger
1/4 cup vodka
1 750ml bottle of champagne, chilled

In a small saucepan, combine sugar, corn syrup, water, and candied ginger. Bring to boiling; reduce heat. Simmer while it is uncovered for 10 minutes. Remove from heat.
Stir in vodka; cool to room temperature. Cover and chill for 4 hours or overnight.
Strain the vodka mixture to remove the candied ginger; discard ginger.
Pour vodka mixture into a large bowl. Slowly pour the champagne down side of bowl; stir gently with an up-and-down motion to mix.
To serve, ladle punch mixture into champagne glasses or punch cups. Serve immediately. Serves 8.

Ginger adds a peppery bite to this sparkling drink. For a nonalcoholic version, skip the vodka and champagne and use the ginger syrup with sparkling water or cider.
