This thickened milk dessert full of tasty crunchy dry fruits and healthy nuts will boost your enthusiasm to celebrate the fiesta.
It is easy to make and delicious to eat. Here is a quick recipe to indulge in spreading joy and happiness on this auspicious day. Rice or any other grain is not used in this kheer.
Preparation Time : 15 minutes; Cooking Time : 1 hour 30 minutes; Serves : 10
Double toned milk 2 litres
Sugar 4 tbsp
Cashew nuts 25
Chironji 2 tsp
Melon seeds 4 tsp
Raisins ½ cup
Phool Makhanas 1 and ½ cups
Green cardamom 2 (powdered)
Method of preparation:
Soak almonds for five to six hours. Peel them off and chop length wise.
Soak 10 cashew nuts in little milk for two hours and make a paste.
Chop rest of the cashew nuts finely.
Soak raisins for half an hour in water and squeeze them out.
Roast the melon seeds and makhanas separately without adding ghee.
Grind the roasted makhanas coarsely in a processor.
Put milk on high flame in a big vessel.
Add all chopped and roasted dry fruits except raisins in it.
Add the paste of cashew nuts also and let a boil comes stirring the dessert occasionally.
Lower the flame and keep stirring for 45 minutes occasionally, otherwise the kheer will stick to the bottom of the vessel.
Add sugar, cardamom powder and raisins. Cook till pudding turns pink or another half an hour. Don’t forget to stir sporadically.
Turn off the gas and transfer the kheer in a serving bowl.
Let it get cool at room temperature and refrigerate for three to four hours.
